미나리는 초봄에 가장 먼저 나는 채소 중 하나입니다. 푸르름과 아삭한 식감, 그리고 향긋한 향은 봄의 시작을 생기롭게 알려줍니다.

어릴 적, 미나리는 그저 쓰고 낯선 녹색 채소였지만, 어느새 향신료를 즐기게 되면서 그 상쾌한 향에 자연스레 끌리게 되었어요. 봄이 되면 어김없이 미나리를 찾게 되더라구요.

그러다 얼마 전, 편의점에서 흥미로운 음료를 발견했습니다. 미나리가 함유된 요구르트! 낯선 조합이지만 호기심에 마셔봤는데 예상보다 향이 은은해 오히려 조화롭다는 인상을 받았습니다. 이후로도 몇 번이나 다시 찾았을 만큼 매력적이었어요. 개인적으로는 향이 조금 더 강했으면 좋겠다는 생각이 들 정도로 미나리와의 궁합이 만족스러웠습니다.

마침 마트에서도 미나리가 제철을 맞아 풍성하게 진열되어 있더라고요. 무심코 지나치다 문득, ‘커피와도 어울릴 수 있겠다’는 생각이 들었습니다.

스페셜티 커피를 즐기시는 분들이라면 한 번쯤 접했을 ‘커피 플레이버 휠‘의 초록색 구역에는 허브 노트가 있는데요. 레몬그라스, 민트, 바질, 타임, 로즈마리, 고수 등 향신채들의 다양한 컵노트가 표기되어 있습니다. 미나리 역시 이 범주 안에 자연스럽게 들어갈 수 있겠다는 생각이 들었어요.

🔸GSC 그린비너 11기와 함께하는 로스터리, 아이덴티티 커피랩(identity_coffeelab)의 파나마 핀카 하트만 카투라 내추럴 21g을 사용하여 에스프레소 60ml를 추출했습니다.

🔸이후 추출한 커피에 송송 썬 미나리와 얼린 미나리 요구르트를 넣고 잘 섞어줍니다.

🔸마지막으로 추출한 에스프레소를 넣어 줍니다.

요구르트 슬러시가 금방 녹을 줄 알고 무모하게 에스프레소를 부었는데… 절반이나 쏟아버렸네요.🥲
그래도 덕분에 생긴 우연한 비주얼! 커피와 섞인 미나리가 층층이 쌓여있는 모습이 마치 작은 테라리움 같기도 했어요.🪴

맛은 기대 이상이었습니다. 미나리의 향과 식감이 한층 또렷하게 느껴져서, 오히려 더 만족스러웠어요.

파나마 핀카 하트만 카투라 내추럴은 워시드처럼 청량한 결도 있어서, 차가운 음료와도 아주 잘 어울리더라구요.

앞으로도 봄이 깊어지는 3-4월이면, 향은 더 짙어지고 식감은 풍부해지는 제철 미나리로, 커피에 싱그러운 봄을 담아 즐기려 합니다.
